For this Mexican delicacy we used corn truffle locally grown from a farm in Hastings!
Huitlacoche (pronounced wee-tlah-KOH-cheh) is a form of mushroom that grows on ears of corn around the kernels in puffy, gray clouds that look kind of like river stones. If you enjoy things like blue cheese, yogurt and yeasty bread. Why not to try corn truffles?
